Lamington Cake


Ingredients

1 ¾ cups all-purpose flour
2 teaspoons baking powder
½ cup unsalted butter, softened
1 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
½ cup milk
1 ½ cups shredded coconut
1 ½ cups powdered sugar
⅓ cup unsweetened cocoa powder
½ cup milk (for icing)
Directions
1. Preheat your oven to 350°F (175°C) and grease a square baking pan (8x8 inches).
2. In a bowl, whisk together the flour and baking powder. Set aside.
3. In a mixing bowl, cream the softened butter and granulated sugar until light and fluffy.
4. Add the eggs and vanilla extract, mixing until combined.
5. Gradually add in the flour mixture, alternating with the milk, and mix until smooth.
6. Pour the batter into the prepared baking pan and spread evenly.
7. Bake for about 30-35 minutes or until a toothpick inserted in the center comes out clean.
8. Let the cake cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
9. Once cooled, slice the cake into squares or rectangles.
10. In a saucepan, combine the powdered sugar, cocoa powder, and milk over low heat, stirring until smooth.
11. Dip each cake piece into the chocolate icing, allowing excess to drip off.
12. Roll the dipped cake squares in shredded coconut until well coated.
